Mashed recently published a fun story on the McRib feature which includes some trivia bits.
Mashed – Everything you need to know about the McRib

Mashed also shared a video summarizing the story if you don’t have time to read all of their article:

A couple of items that should be clarified

  • The topping on the McRib bun is more of a cornmeal substance than sesame seed.
  • The original pork chop form of the McRib was a result of research by the US Army. They wanted to provide a meal that would remind soldiers away from home of a favorite from back home, and pork chops themselves would have been difficult to distribute. The McRib industrial complex: how the Army made the world’s weirdest meat
  • The Gym mat controversy is tied to the bun of the sandwich. The ingredient  azodicarbonamide has been used as a flour-bleaching agent across the industry. This has rapidly been phased out in the industry due to the Gym mat controversy.
  • While the McRib does tend to return in November, which often aligns with lower pork prices, stores are free to offer the sandwich throughout the year. Most recently, Florida offered the McRib into early spring in 2017.
